Sweet and Sour Cabbage

 

½ medium head red cabbage (3/4 lb), shredded

2 slices bacon

 
¼ cup brown sugar

1 tablespoon all purpose flour

¼ cup water

1 Tbsp vinegar + 2 Tbsp vinegar

½ tsp salt

dash pepper

½ small onion, sliced

 

1.    Bring a stock pot of water to a boil.  Salt water. 

2.    Add shredded cabbage and 1 Tbsp vinegar.

3.    Cover and heat to boiling for 5-8 minutes or until cabbage is tender. 

4.    Drain, put cabbage back in stockpot. 

5.    Stir in water, remaining vinegar, salt, pepper and onions.

6.    Meanwhile, Cook bacon until crisp.  Dice into small pieces. 

7.    Stir brown sugar and flour into bacon grease in skillet

8.    Stir bacon and sauce mixture into hot cabbage. 

9.    Cook, stirring frequently until mixture thickens, about five minutes
